酥皮烤大虾的做法步骤

1大青虾8只。 -
2把青虾头尾分开，用刀在虾背开一刀，取出虾线【虾肠】。 -
3用刀在虾肉上斩几下，防止烤制时虾肉收缩卷起。 -
4在虾肉上喷一点料酒，撒一点胡椒粉和少许盐码一下底味。 -
5虾头汆一下水，防止搁置时间长会变黑。 -
6锅中放少许油，加入洋葱末，姜米和蒜米煸香，再加入一勺高汤【没有高汤加水】，再调入番茄酱、海鲜酱和蚝油，烧开收汁熬成调味酱。 -
7将虾子摆放在酥皮上。 -
8在酥皮上刷上蛋液，按虾形将其分开，虾肉上放上熬好的调味酱。放入烤箱190°c烤20分钟左右。 -
9烤好的酥皮虾。
